Loureen’s Filipino Pork Asado Recipe

Pork, potatoes, fresh vegetables, what more could you want? This dish is so simple and yet so amazingly wonderful, I hope you enjoy making and eating this as much as we do.
  • 2lbs (1k) pork leg (Pigue)
  • 1lbs (500g) potatoes
  • 1/2 cup lime juice (calamansi juice)
  • 2/3 cup Soy Sauce
  • 1lbs (500g) ripe tomatoes
  • 1 red bell pepper cut into strips
  • 2 bay leaves
  • 2 onions, chopped
  • 3 cloves of garlic chopped
  • 1/4 cup coconut oil (olive oil will work)
  1. wash pork and marinade in a marinade container with lime juice (calamansi juice) soy sauce, and bay leaves for 3-6 hours in the fridge
  2. steam the tomatoes for 2 min then peel them and put in the blender
  3. peel potatoes and shallow fry them until light brown
  4. saute garlic & onions until fragrant
  5. add the pork to the Frying Pan and turn every min for about 5 min or until pork is slightly done
  6. add the marinade and simmer for about 5-10 min
  7. add the blended tomatoes & simmer until pork is tender
  8. add the potatoes and bell pepper, simmer till the potatoes are done & the tomato puree starts sticking to the meat & potatoes
To Serve
  1. take the meat out of the pot and slice it into 1/4 inch strips place the sliced meat into the serving dish & spread it out evenly
  2. do the same with the potatoes, arrange them around the meat
  3. pour the remaining sauce over the top
  4. garnish with parsley and bell pepper
