Loureen’s Filipino Pineapple Chicken Recipe

This is in my top 10 personal favorites that my wife makes, using fresh pineapple will make a world of difference in this dish. Make plenty because everyone is going to want seconds!
Ingredients
  • 2 lbs (1kilo) Chicken Drumsticks
  • 2 Cloves Of Garlic, Chopped
  • 1 Medium Onion, Sliced
  • 1/4 Cup Of Soy Sauce
  • 2 Cups of fresh Pineapple Chunks (Pineapple Slicer)
  • 8 oz (250 ml) Pineapple Juice
  • 2 Tbsp Brown Sugar
  • 3 tbsp coconut oil
Instructions
  1. Wash The Chicken & Let It Dry In A Colander
  2. Cut The Chicken Into Bite Size Pieces
  3. Saute The Garlic & Onions Until Golden Brown
  4. Add The Chicken & Saute For About 5 Min
  5. Add The Peppercorns, Soy Sauce, & Pineapple Juice
  6. Let that simmer for for another 5 Min
  7. Add The Pineapple Chunks and Brown Sugar
  8. Let Simmer Until Chicken Is Done & Some Of The Liquid Evaporates
  9. Serve With A Sprinkle Of Chopped Spring Onions (green onions)

      Thanks Hannah, This is one of my fav recipes, I love the sweet and sour flavors, you can do this with meat balls too, you can use ground beef but my wife and daughter don’t like the heavy flavor of beef, so we usually use ground pork, which I have come to love as much as ground beef.

  4. I really love sweet and sour anything and this looks really, really good. Might have to make it sometime. I’m generally not a huge fan of pineapples mixed in but I think it would be good in this case.

      I think you will like it, I have a feeling when you make this you will be back here posting how good it is, This is one of my Favorite dishes that my wife makes. I too am a huge fan of sweet n sour
